Instructions

  1. In a large mixing bowl, combine flour, sugar, salt, and instant yeast. Add warm milk and softened butter; knead until smooth.
  2. Shape dough into a rectangle, cover with plastic wrap, and refrigerate for 30 minutes.
  3. Prepare the butter block by flattening chilled butter between parchment sheets into a rectangle about half an inch thick.
  4. Roll out the dough into a rectangle twice the size of the butter block; place butter on one half and fold over to seal.
  5. Perform three to four folds, chilling for 30 minutes between each fold to maintain flakiness.
  6. Roll laminated dough into a rectangle (12×18 inches) and cut into smaller rectangles (3×6 inches). Place chocolate at one end and roll tightly.
  7. Allow croissants to rise on a parchment-lined sheet for 1–2 hours until slightly puffy.
  8. Brush with egg wash (whisked egg and milk) before baking in a preheated oven at 400°F (200°C) for 18–20 minutes until golden brown.
