  • 1/3 cup red apple vinegar
  • 2 teaspoons lemon juice
  • 1 1/2 teaspoons minced garlic
  • 1 teaspoon sugar
  • 2 teaspoons dried oregano
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup extra-virgin olive oil
  • 1 pound asparagus
  • 2 1/2 cups uncooked penne or rotini pasta
  • 2/3 cup sliced red onions
  • 1 1/2 cups diced tomatoes
  • 2/3 cup shredded Parmesan cheese for serving

Instructions

  1. Boil water in a large pot and add salt. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Trim the asparagus, cut into bite-sized pieces, then blanch in boiling water for 2-3 minutes. Drain and rinse under cold water.
  3. In a mixing bowl, whisk together vinegar, lemon juice, garlic, sugar, oregano, red pepper flakes, and olive oil to make the dressing.
  4. In a large bowl, combine cooled pasta, blanched asparagus, tomatoes, onions, and half of the dressing. Toss gently.
  5. Serve on a platter or in bowls with the remaining dressing drizzled on top.
