- 1/3 cup red apple vinegar

- 1 teaspoon sugar
- 2 teaspoons dried oregano
- 1/2 teaspoon crushed red pepper flakes
- 1/2 cup extra-virgin olive oil
- 1 pound asparagus
- 2 1/2 cups uncooked penne or rotini pasta
- 2/3 cup sliced red onions
- 1 1/2 cups diced tomatoes
- 2/3 cup shredded Parmesan cheese for serving
Instructions
- Boil water in a large pot and add salt. Cook the pasta according to package instructions until al dente. Drain and set aside.
- Trim the asparagus, cut into bite-sized pieces, then blanch in boiling water for 2-3 minutes. Drain and rinse under cold water.
- In a mixing bowl, whisk together vinegar, lemon juice, garlic, sugar, oregano, red pepper flakes, and olive oil to make the dressing.
- In a large bowl, combine cooled pasta, blanched asparagus, tomatoes, onions, and half of the dressing. Toss gently.
- Serve on a platter or in bowls with the remaining dressing drizzled on top.
