  • 4 skinless salmon fillets (about 6 oz each)
  • 1 bunch fresh asparagus
  • 1 cup ricotta cheese
  • 2 tablespoons fresh basil
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • Salt and black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine ricotta cheese, chopped basil, lemon zest, lemon juice, minced garlic, salt, and pepper; mix well.
  3. Blanch asparagus in boiling water for 1–2 minutes until tender; drain and set aside.
  4. Butterfly thick salmon fillets and flatten slightly with a meat mallet if needed.
  5. Spread the ricotta mixture on each fillet, place blanched asparagus at one end, and roll tightly; secure with kitchen tape or toothpicks.
  6. Place rolls seam-side down in a greased baking dish, drizzle with olive oil, season with salt and pepper.
  7. Bake for 18–22 minutes until cooked through.
