Ingredients
- 1 small cooking apple (approx. 75g/2.6oz)
- 55 g full-fat cream cheese, room temperature
- 2 tbsp confectioners’ sugar
- 175 g all-butter shortbread biscuits, finely crumbled
- 100 g white chocolate (for coating)
- 200 g white chocolate (melted)
- ½ tsp cinnamon
- ¼ tsp cinnamon
Instructions
- Peel and chop the apple into small chunks and cook with 1 tbsp water over medium heat for 3-5 minutes until softened. Allow to cool.
- In a mixing bowl, blend cream cheese and confectioners’ sugar until smooth.
- Stir in crumbled shortbread biscuits, cinnamon, melted white chocolate, and cooled apple chunks. Chill mixture for one hour.
- Roll chilled mixture into balls and place on parchment-lined tray; chill again for 30 minutes.
- Dip each ball in melted white chocolate to coat thoroughly and sprinkle with cinnamon before chilling to set.
