Ingredients

  • 2 cups grated zucchini
  • 1 large egg
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup cornstarch
  • Salt and pepper, to taste
  • 2 tablespoons garlic butter
  • 12 cups shredded cheddar cheese

Instructions

  1. Squeeze moisture out of the grated zucchini using a cheesecloth or kitchen towel.
  2. In a mixing bowl, combine the dry zucchini with egg, Parmesan, cornstarch, salt, and pepper until dough-like.
  3. Heat garlic butter in a skillet over medium heat.
  4. Form patties from the mixture and cook each for 3–4 minutes per side until golden and crispy.
  5. Assemble by placing shredded cheddar on one patty and topping with another patty. Cook an additional 3 minutes until cheese melts.
  6. Slice, serve warm, and enjoy!
