  • 1 can (400g) chickpeas, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a mixing bowl, combine zucchinis, chickpeas, bell pepper, and red onion. Drizzle with olive oil and sprinkle in oregano, smoked paprika, salt, and pepper. Toss well to coat.
  3. Spread the mixture evenly on the prepared baking sheet and roast for 25-30 minutes, tossing halfway through until tender and golden.
