Ingredients
- 2 zucchini, grated
- 1 carrot, grated
- 2 tablespoons olive oil
- 1 onion, diced
- 2 turkey bacon slices, diced
- 5 eggs, lightly whisked
- 1 cup self-raising flour
- 1¼ cup grated cheddar cheese
Instructions
- Preheat the oven to 180C (350F) and line a square baking dish with baking paper.
- Grate zucchini and carrot; sprinkle with salt and let them drain in a colander for 10 minutes.
- In a frying pan, heat olive oil and cook onion and turkey bacon until golden brown; allow to cool slightly.
- Squeeze excess moisture from zucchini and carrot; mix with capsicum/pepper, cooked onion, turkey bacon, cheese, flour, eggs, milk, remaining oil, salt, and pepper in a large bowl.
- Pour the mixture into the baking dish, smooth the top, sprinkle extra cheese on top, and bake for 35-40 minutes until firm.
