- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) no-salt-added sweet corn, rinsed and drained
- 1 cup mixed red and yellow bell peppers, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/4 cup freshly squeezed lime juice
- 1 cup plain Greek yogurt
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- While the pasta cooks, chop the bell peppers, red onion, and cilantro.
- In a bowl, whisk together Greek yogurt, lime juice, olive oil, salt, and pepper until smooth.
- In a large bowl, combine cooked pasta, black beans, corn, chopped veggies, and dressing. Toss gently to coat.
