  • 8 oz rotini or penne pasta
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) no-salt-added sweet corn, rinsed and drained
  • 1 cup mixed red and yellow bell peppers, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup freshly squeezed lime juice
  • 1 cup plain Greek yogurt
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta cooks, chop the bell peppers, red onion, and cilantro.
  3. In a bowl, whisk together Greek yogurt, lime juice, olive oil, salt, and pepper until smooth.
  4. In a large bowl, combine cooked pasta, black beans, corn, chopped veggies, and dressing. Toss gently to coat.
  5. Cover and chill in the refrigerator for at least one hour before serving.
  6. Serve chilled or at room temperature; garnish with additional cilantro if desired.
