This recipe features chewy udon noodles tossed with succulent shrimp, colorful vegetables, and a savory sauce that perfectly melds together for a satisfying meal.


Ingredients

  • 200g udon noodles
  • 100g shrimp
  • 1 garlic clove (minced)
  • 1 yellow onion (sliced)
  • 120g white mushrooms (sliced)
  • 1 carrot (cut matchstick-style)
  • 1 spring onion (chopped)
  • 2 tbsp neutral oil
  • 1 tbsp regular soy sauce
  • pinch salt and pepper
  • 1 tsp rice vinegar
  • 1 tsp brown sugar
  • 2 tsp toasted sesame oil

Instructions

  1. Boil udon noodles according to package instructions. Drain and rinse under cold water to stop cooking; toss with a bit of oil.
  2. Heat 1 tbsp of oil in a wok and sauté minced garlic until fragrant. Add sliced mushrooms and cook until tender, then add onions and carrots; stir-fry for 2-3 minutes.
  3. In the same pan, heat another 2 tbsp of oil over medium-high heat. Add shrimp and soy sauce; cook until shrimp turn pink.
  4. Add the boiled udon noodles to the pan and stir-fry on high heat until slightly crispy.
  5. Pour in the prepared sauce mixture and toss everything well.
  6. Stir in sautéed vegetables until combined.
  7. Serve hot, garnished with chopped green spring onion.
