- 200g udon noodles
- 100g shrimp
- 1 garlic clove (minced)
- 1 yellow onion (sliced)
- 120g white mushrooms (sliced)
- 1 carrot (cut matchstick-style)
- 1 spring onion (chopped)
- 2 tbsp neutral oil
- 1 tbsp regular soy sauce
- pinch salt and pepper
- 1 tsp rice vinegar
- 1 tsp brown sugar
- 2 tsp toasted sesame oil
Instructions
- Boil udon noodles according to package instructions. Drain and rinse under cold water to stop cooking; toss with a bit of oil.
- Heat 1 tbsp of oil in a wok and sauté minced garlic until fragrant. Add sliced mushrooms and cook until tender, then add onions and carrots; stir-fry for 2-3 minutes.
- In the same pan, heat another 2 tbsp of oil over medium-high heat. Add shrimp and soy sauce; cook until shrimp turn pink.
- Add the boiled udon noodles to the pan and stir-fry on high heat until slightly crispy.
- Pour in the prepared sauce mixture and toss everything well.
- Stir in sautéed vegetables until combined.
- Serve hot, garnished with chopped green spring onion.
