Ingredients
- 4 cups raspberries (fresh or frozen)
- ½ cup water
- ¾ cup granulated sugar
- 1 tablespoon lemon juice
- 1 ½ cup heavy cream
- 16 ounces mascarpone cheese
- ¾ cup raspberry syrup (from above recipe)
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 (7 oz) package Savoiardi ladyfingers (about 24)
- 1 ounce good-quality white chocolate
Instructions
- Prepare the raspberry syrup: Combine raspberries, water, sugar, and lemon juice in a saucepan over medium heat. Stir until boiling, then reduce heat and simmer for about 10 minutes until thickened. Cool.
- Make the mascarpone filling: Whip heavy cream to stiff peaks. In another bowl, mix mascarpone with sugar until smooth, then gently fold in whipped cream along with raspberry syrup and vanilla.
- Assemble the tiramisu: Quickly dip each ladyfinger in the cooled raspberry syrup and layer half at the bottom of a baking dish. Spread half of the mascarpone filling over the ladyfingers. Repeat with remaining ladyfingers and filling. Grate white chocolate on top.
- Chill: Cover and refrigerate for at least 6 hours or overnight for best results.
