  • 4 cups raspberries (fresh or frozen)
  • ½ cup water
  • ¾ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 ½ cup heavy cream
  • 16 ounces mascarpone cheese
  • ¾ cup raspberry syrup (from above recipe)
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 (7 oz) package Savoiardi ladyfingers (about 24)
  • 1 ounce good-quality white chocolate

Instructions

  1. Prepare the raspberry syrup: Combine raspberries, water, sugar, and lemon juice in a saucepan over medium heat. Stir until boiling, then reduce heat and simmer for about 10 minutes until thickened. Cool.
  2. Make the mascarpone filling: Whip heavy cream to stiff peaks. In another bowl, mix mascarpone with sugar until smooth, then gently fold in whipped cream along with raspberry syrup and vanilla.
  3. Assemble the tiramisu: Quickly dip each ladyfinger in the cooled raspberry syrup and layer half at the bottom of a baking dish. Spread half of the mascarpone filling over the ladyfingers. Repeat with remaining ladyfingers and filling. Grate white chocolate on top.
  4. Chill: Cover and refrigerate for at least 6 hours or overnight for best results.
