  • 6 cups chicken broth
  • 2 (15.5 oz.) cans cannellini beans (drained)
  • 1 (15.25 oz.) can whole kernel sweet corn (drained)
  • 8 oz. cream cheese (softened)
  • 3 tablespoons butter
  • 1 yellow onion (diced)
  • 4 cloves garlic (minced)
  • 2 (4 oz.) cans mild green chilies (undrained)
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon mustard powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 1 pinch red pepper flakes
  • 3 tablespoons flour
  • ⅓ cup half and half
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Combine seasonings in a bowl; set aside.
  2. In a large pot over medium heat, melt butter and sauté onions and jalapeño until softened. Add garlic and cook for an additional minute.
  3. Sprinkle flour over vegetables, mix well, and cook for about 2 minutes.
  4. Gradually add chicken broth while stirring; then stir in half and half.
  5. For a thicker texture, blend one cup of drained beans with half a cup of broth before adding back to the pot along with remaining whole beans.
  6. Add combined seasonings, hot sauce, Worcestershire sauce, and green chilies; bring to a boil then reduce to simmer for about 15 minutes.
  7. Season chicken with salt and pepper, then add to the pot along with corn; simmer uncovered for another 15–20 minutes.
  8. Remove chicken to shred it before returning it to the pot.
  9. Stir in softened cream cheese until melted; adjust seasoning if necessary.
