  • 8 oz (2 cups) pasta (penne or fusilli)
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 medium red onion, finely chopped
  • 1 cup bell peppers (any color), diced
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine cherry tomatoes, cucumber, red onion, bell peppers, and parsley.
  3. Add the rinsed chickpeas to the vegetable mixture.
  4. In a separate bowl, whisk together lemon juice, olive oil, salt, and pepper.
  5. Once the pasta has cooled completely, add it to the vegetable-chickpea bowl and pour over the dressing. Toss gently until well coated.
  6. Serve immediately or refrigerate for at least 30 minutes to let flavors meld.
