- 1 can (15 oz) chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved

- 1 cup bell peppers (any color), diced
- 1/4 cup fresh parsley, chopped
- 3 tbsp lemon juice
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, bell peppers, and parsley.
- Add the rinsed chickpeas to the vegetable mixture.
- In a separate bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Once the pasta has cooled completely, add it to the vegetable-chickpea bowl and pour over the dressing. Toss gently until well coated.
- Serve immediately or refrigerate for at least 30 minutes to let flavors meld.
