- 1/2 cup oat milk
- 2 teaspoons pure vanilla extract
- 1 1/2 cups powdered sugar (for glaze)
- 4 tablespoons pure maple syrup
- 1 teaspoon ground cinnamon
- 2–4 tablespoons oat milk (for glaze)
Instructions
- Preheat the oven to 350°F and spray a donut pan with non-stick spray.
- In a large bowl, whisk together flour, brown sugar, baking powder, pumpkin pie spice, and salt.
- Add melted vegan butter, pumpkin puree, oat milk, and vanilla extract; mix until combined.
- Spoon batter into the donut pan until filled to the top.
- Bake for 10–12 minutes until edges are browned and donuts spring back when touched.
- For the glaze, whisk powdered sugar, maple syrup, cinnamon, and oat milk until smooth.
- Dip each cooled donut into the glaze and place on a wire rack to set.
