  • 2 pounds boneless skinless chicken breasts
  • ½ cup sliced raw almonds
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 cup red grapes (quartered)
  • 2 celery ribs (diced)
  • 3 green onions (sliced)
  • 2 tablespoons finely chopped parsley
  • 1 tablespoon finely chopped tarragon
  • Juice of 1 lemon (about 3 tablespoons)
  • Kosher salt and freshly ground black pepper (to taste)

Instructions

  1. Boil the chicken breasts in salted water for about 15 minutes until fully cooked. Remove from heat and let cool before dicing.
  2. While cooling, chop the celery, green onions, parsley, tarragon, and quarter the grapes.
  3. In a large bowl, combine the chopped ingredients with sliced almonds.
  4. In a separate bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
  5. Add diced chicken to the vegetable mixture and pour the dressing over it. Gently mix until all ingredients are well-coated.
  6. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
