Description

Twice Baked Potatoes are the ultimate comfort food, combining the crispiness of potato skins with a luxuriously creamy and cheesy filling. This crowd-pleasing dish is not only perfect for holiday gatherings but also ideal for casual get-togethers or weeknight dinners.


Ingredients

  • 4 large russet potatoes
  • ½ cup sour cream
  • ⅓ cup whole milk
  • 4 tablespoons butter
  • ¾ cup cheddar cheese
  • 3 tablespoons chopped chives
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat oven to 400°F. Wash and dry potatoes, prick with a fork, and bake on a parchment-lined baking sheet for 50-60 minutes until tender.
  2. Cook turkey bacon in a skillet over medium heat until crispy; crumble once cooled.
  3. Let baked potatoes cool slightly, then slice in half lengthwise and scoop out flesh into a mixing bowl.
  4. Mix potato flesh with sour cream, milk, butter, crumbled turkey bacon, half of the cheddar cheese, and chives until smooth.
  5. Fill potato skins with the mixture and top with remaining cheddar cheese. Bake for another 15-20 minutes until cheese is melted and golden.
  6. Garnish with leftover chives before serving.
