  • 1/2 teaspoon paprika
  • 2 tablespoons minced flat-leaf parsley
  • For Garnish: 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Microwave the sweet potatoes until tender (about 8-10 minutes total). Let cool.
  2. Cut the potatoes in half and scoop out the flesh into a bowl. Mix with olive oil, cumin, salt, and pepper.
  3. In a skillet, cook ground turkey with garlic and spices until fully cooked. Stir in crushed tomatoes.
  4. Fill the potato skins with the turkey mixture and top with cheese.
