Ingredients
- 2 large onions
- 3 medium zucchinis
- 1 medium eggplant
- 3 bell peppers
- 2 large potatoes
- 1 box white mushrooms
- 1 can diced tomatoes
- 2 tablespoons tomato paste
- ½ cup extra virgin olive oil
- 2 tablespoons dried oregano
- Salt to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large roasting pan, combine sliced onions, zucchini halves, eggplant chunks, thickly sliced bell peppers, quartered potatoes, and halved mushrooms.
- Add diced tomatoes and tomato paste; stir gently.

- Cover with foil and roast for 45 minutes.
- Remove foil and roast for an additional 20-30 minutes until tender and caramelized.
