  • 2 large onions
  • 3 medium zucchinis
  • 1 medium eggplant
  • 3 bell peppers
  • 2 large potatoes
  • 1 box white mushrooms
  • 1 can diced tomatoes
  • 2 tablespoons tomato paste
  • ½ cup extra virgin olive oil
  • 2 tablespoons dried oregano
  • Salt to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large roasting pan, combine sliced onions, zucchini halves, eggplant chunks, thickly sliced bell peppers, quartered potatoes, and halved mushrooms.
  3. Add diced tomatoes and tomato paste; stir gently.
  4. Drizzle with olive oil and sprinkle with oregano and salt; toss to coat.
  5. Add water or white wine as needed.
  6. Cover with foil and roast for 45 minutes.
  7. Remove foil and roast for an additional 20-30 minutes until tender and caramelized.
