  • 200 g dark chocolate
  • 200 g butter
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 3 tbsp cocoa powder (plus extra for dusting)
  • 5 eggs (separated)
  • 1 1/4 cups granulated sugar
  • 1 1/2 cups almond flour

Instructions

  1. Preheat the oven to 180°C (350°F) and prepare an 8-9 inch springform pan by lining it with parchment paper.
  2. Melt the butter and dark chocolate in a bowl using a microwave or bain-marie until smooth; let cool.
  3. In a separate bowl, whisk egg yolks with cooled chocolate mixture, vanilla extract, salt, and cocoa powder until well combined.
  4. In a large bowl, whip egg whites until soft peaks form; gradually add sugar until medium to stiff peaks are achieved.
  5. Gently fold the chocolate mixture into the whipped egg whites, then add almond flour and fold until combined.
  6. Pour the batter into the prepared pan and smooth the top. Bake for about 30 minutes or until set with moist crumbs when tested with a skewer.
  7. Allow the cake to cool before dusting with cocoa powder or powdered sugar; serve as desired.
