Ingredients

  • 1 cup extra-virgin olive oil (divided)
  • 4 sprigs of fresh thyme
  • 1 handful of almonds (or your preferred nuts, roughly chopped)
  • 8 garlic cloves (thinly sliced)
  • 1/2 teaspoon Aleppo pepper or red chili flakes (optional for a hint of heat)
  • 3 ounces feta cheese, crumbled
  • 1/3 cup fresh parsley (chopped)
  • Fresh bread (for serving)

Instructions

  1. In a small saucepan over low heat, combine half of the olive oil with sliced garlic and thyme sprigs. Cook gently for about 5 minutes until fragrant. Remove from heat and let cool slightly.
  2. In a food processor, combine the cooled oil mixture, remaining olive oil, crumbled feta cheese, chopped almonds, optional Aleppo pepper, and parsley. Pulse until smooth yet slightly chunky.
  3. Transfer to a mixing bowl; drizzle with additional olive oil if desired and garnish with parsley. Serve with fresh bread or dippers of choice.
