  • 2 medium zucchini
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1/2 cup panko breadcrumbs
  • 1/2 cup Fontina cheese
  • 1/2 cup fresh mozzarella cheese
  • 2 cups marinara sauce
  • Fresh parsley (for garnish)

Instructions

  1. Preheat the oven broiler.
  2. Slice zucchini lengthwise into 1/2 inch pieces.
  3. Set up three shallow bowls: one with flour, one with beaten egg, and one with a mixture of panko breadcrumbs, parsley, and Parmesan.
  4. Dredge each zucchini slice in flour, then egg, followed by the breadcrumb mixture.
  5. Fry in a nonstick skillet until golden brown on both sides.
