  • 2 cups beef broth
  • 2 cans kidney beans (15 oz each), drained and rinsed
  • 1 can pinto beans (15 oz), drained and rinsed
  • 23 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. In a large pot or Dutch oven over medium heat, sauté diced onion and green bell pepper until softened (about 5 minutes). Add minced garlic; cook until fragrant (about 1 minute).
  2. Add ground beef or turkey to the pot and brown it thoroughly (about 7-10 minutes). Drain excess fat if needed.
  3. Stir in diced tomatoes, tomato sauce, beef broth, kidney beans, and pinto beans. Season with chili powder, cumin, paprika, cayenne pepper (if desired), salt, and black pepper.
  4. Bring to a boil; reduce heat to low and cover partially with a lid. Let simmer for about 30 minutes while stirring occasionally.
  5. Taste and adjust seasoning as needed before serving hot with your choice of toppings.
