- 1 cup pineapple chunks (fresh or canned)
- 1 medium red bell pepper (diced)
- 1 medium green bell pepper (diced)
- 1/2 medium onion (sliced, optional)
- 2 tbsp vegetable oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- In a mixing bowl, combine cornstarch, salt, and black pepper. Toss the chicken pieces in the mixture until evenly coated.
- Heat vegetable oil in a skillet over medium-high heat. Add the coated chicken pieces to the skillet. Cook for about 5–7 minutes until golden brown and cooked through. Remove from skillet.
- In a separate bowl, whisk together ketchup, rice vinegar, soy sauce, sugar, and pineapple juice until well combined.
- In the same skillet used for chicken, add diced red bell pepper, green bell pepper, and optional onion. Stir-fry for about 3–5 minutes until they begin to soften.
- Add cooked chicken back into the skillet along with pineapple chunks. Pour in the prepared sauce. Stir well to coat everything evenly.
