- 400g boneless, skinless chicken breast or thighs
- 1 cup pineapple chunks (fresh or canned in juice)
- 3 tablespoons soy sauce
- 2 cloves garlic (minced)
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1 tablespoon rice vinegar
- 2 cups cooked white or brown rice
- 2 stalks green onions (chopped)
- 1 tablespoon sesame oil or vegetable oil
Instructions
- Dice the chicken into bite-sized pieces and mince the garlic.
- In a bowl, whisk together soy sauce, brown sugar, rice vinegar, and cornstarch until smooth.
- Heat sesame oil in a skillet over medium-high heat. Add chicken and cook for 6–8 minutes until golden brown.
- Stir in minced garlic and pineapple chunks; cook for another 2–3 minutes.
- Pour in the sauce mixture and stir continuously for about 2–3 minutes until thickened.
- Serve over warm rice and garnish with chopped green onions.
