  • 400g boneless, skinless chicken breast or thighs
  • 1 cup pineapple chunks (fresh or canned in juice)
  • 3 tablespoons soy sauce
  • 2 cloves garlic (minced)
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon rice vinegar
  • 2 cups cooked white or brown rice
  • 2 stalks green onions (chopped)
  • 1 tablespoon sesame oil or vegetable oil

Instructions

  1. Dice the chicken into bite-sized pieces and mince the garlic.
  2. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, and cornstarch until smooth.
  3. Heat sesame oil in a skillet over medium-high heat. Add chicken and cook for 6–8 minutes until golden brown.
  4. Stir in minced garlic and pineapple chunks; cook for another 2–3 minutes.
  5. Pour in the sauce mixture and stir continuously for about 2–3 minutes until thickened.
