  • 200g baby potatoes, halved or quartered
  • 1 cup leafy greens (spinach, kale, or Swiss chard)
  • 2 tbsp olive oil
  • Salt & freshly cracked black pepper
  • Optional: paprika or dried herbs

Instructions

  1. Preheat oven to 200°C (400°F). Toss baby potatoes with 1 tablespoon olive oil, salt, pepper, and optional paprika. Roast for 25-30 minutes until golden and crispy.
  2. In a skillet over medium heat, drizzle olive oil and sauté leafy greens for 2-3 minutes until wilted. Season lightly.
  3. In another non-stick skillet, heat remaining olive oil over medium heat and crack in eggs. Cook sunny-side up until whites are set and yolks remain soft.
  4. Serve by plating crispy potatoes, sautéed greens, and sunny-side eggs together.
