Ingredients

Scale
  • 2 cups softened cream cheese
  • 1 cup powdered sugar
  • 1 cup finely chopped fresh strawberries
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 2 cups white chocolate chips or candy melts

Instructions

  1. In a mixing bowl, beat together cream cheese, powdered sugar, strawberries, vanilla extract, and lemon juice until smooth. Chill in the refrigerator for 30-45 minutes.
  2. In another bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined. Press into the bottom of egg-shaped molds.
  3. Spoon chilled cheesecake mixture into molds over the crust and smooth with a spatula. Freeze for 2-3 hours until firm.
  4. Melt white chocolate chips in a saucepan over low heat; add food coloring if desired. Dip each frozen cheesecake egg into melted chocolate and coat thoroughly.
