  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups diced strawberries (fresh or frozen)

  2. In a large bowl, mash the ripe bananas and mix in sugar, sour cream (or yogurt), milk, egg, and vanilla extract until smooth.
  3. Sift together the flour, baking powder, baking soda, and salt; fold into the wet mixture until just combined.
  4. Gently stir in the diced strawberries.
  5. Fill each muffin cup with batter up to the top and bake for 5 minutes at 425°F before reducing heat to 350°F for an additional 10-12 minutes until golden.
