Instructions
- Preheat your oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
- In a bowl, combine chopped dates and baking soda. Heat milk until scalding and pour over the dates; let cool for about 15 minutes.
- Mix flour, baking powder, and salt in one bowl. In another bowl, blend eggs, dark brown sugar, butter, and vanilla extract using a food processor until combined.
- Gradually add dry ingredients while mixing on low speed. Once combined, add the soaked date mixture and blend until smooth.
- Pour batter into the prepared dish and bake for approximately 30 minutes until set and golden around the edges.
- For the caramel sauce: Melt butter in a saucepan, stir in brown sugar and salt until dissolved, then gradually add cream while stirring until thickened.
