  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 cup butter (for caramel sauce)
  • 2 cups brown sugar (for caramel sauce)
  • 1 cup heavy cream (35%) (for caramel sauce)
  • 1 teaspoon kosher salt (for caramel sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
  2. In a bowl, combine chopped dates and baking soda. Heat milk until scalding and pour over the dates; let cool for about 15 minutes.
  3. Mix flour, baking powder, and salt in one bowl. In another bowl, blend eggs, dark brown sugar, butter, and vanilla extract using a food processor until combined.
  4. Gradually add dry ingredients while mixing on low speed. Once combined, add the soaked date mixture and blend until smooth.
  5. Pour batter into the prepared dish and bake for approximately 30 minutes until set and golden around the edges.
  6. For the caramel sauce: Melt butter in a saucepan, stir in brown sugar and salt until dissolved, then gradually add cream while stirring until thickened.
  7. After baking, poke holes in the pudding with a fork and pour one-third of the caramel sauce over it. Let it soak for about 15 minutes before serving warm with whipped cream.
