- 3 large eggs
- 2 cups cottage cheese
- 10 oz package frozen chopped spinach (thawed and well drained)
- 1/3 cup crumbled feta cheese
- 1/3 cup diced sweet onion
- 1/4 cup melted butter
- 2 tablespoons freshly grated Parmesan cheese
- 1/8 teaspoon black pepper
- 1/8 teaspoon garlic powder
- dash of nutmeg
Instructions
- Preheat your oven to 350°F.
- Grease a 1 & 1/2-quart casserole dish.
- In a mixing bowl, combine beaten eggs, cottage cheese, thawed spinach, feta cheese, diced onion, melted butter, Parmesan cheese, black pepper, garlic powder, and nutmeg. Mix until well combined.
- Pour the mixture into the greased casserole dish.
- Bake uncovered for 40-45 minutes or until the center is nearly set and edges are golden.
- Let cool for 5-10 minutes before cutting into squares. Serve warm.
