Description

  • 3 large eggs
  • 2 cups cottage cheese
  • 10 oz package frozen chopped spinach (thawed and well drained)
  • 1/3 cup crumbled feta cheese
  • 1/3 cup diced sweet onion
  • 1/4 cup melted butter
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • dash of nutmeg

Instructions

  1. Preheat your oven to 350°F.
  2. Grease a 1 & 1/2-quart casserole dish.
  3. In a mixing bowl, combine beaten eggs, cottage cheese, thawed spinach, feta cheese, diced onion, melted butter, Parmesan cheese, black pepper, garlic powder, and nutmeg. Mix until well combined.
  4. Pour the mixture into the greased casserole dish.
  5. Bake uncovered for 40-45 minutes or until the center is nearly set and edges are golden.
  6. Let cool for 5-10 minutes before cutting into squares. Serve warm.
