Description

Ingredients

  • 2 packs enoki mushrooms
  • 1 clove garlic (minced)
  • 2 tbsp neutral oil (divided)
  • 2 tbsp gochujang
  • 1 tbsp gochugaru (or ½ tsp chili flakes)
  • ½ tbsp soy sauce
  • 1 tsp rice apple vinegar
  • ½ tbsp sugar
  • ½ tsp toasted sesame oil
  • ½ cup water
  • 1 tbsp Buldak sauce (optional)

Instructions

  1. In a small bowl, mix together all sauce ingredients until well combined.
  2. Trim the roots off the enoki mushrooms and rinse under water; pat dry and break into smaller groups.
  3. Heat 1 tablespoon oil in a large skillet over medium-high heat; cook half the mushrooms for about 1-2 minutes per side until golden brown. Remove and repeat with remaining mushrooms.
  4. In the same skillet, add another tablespoon of oil; sauté minced garlic until fragrant (about 30 seconds). Pour in the prepared sauce and bring to simmer.
  5. Add all cooked mushrooms back to the skillet; cook uncovered for about 3-4 minutes until evenly coated and sauce reduces slightly. Serve hot!
