Ingredients
- 2 packs enoki mushrooms
- 1 clove garlic (minced)
- 2 tbsp neutral oil (divided)
- 2 tbsp gochujang
- 1 tbsp gochugaru (or ½ tsp chili flakes)
- ½ tbsp soy sauce
- 1 tsp rice apple vinegar
- ½ tbsp sugar
- ½ tsp toasted sesame oil
- ½ cup water
- 1 tbsp Buldak sauce (optional)
Instructions
- In a small bowl, mix together all sauce ingredients until well combined.
- Trim the roots off the enoki mushrooms and rinse under water; pat dry and break into smaller groups.
- Heat 1 tablespoon oil in a large skillet over medium-high heat; cook half the mushrooms for about 1-2 minutes per side until golden brown. Remove and repeat with remaining mushrooms.
- In the same skillet, add another tablespoon of oil; sauté minced garlic until fragrant (about 30 seconds). Pour in the prepared sauce and bring to simmer.
- Add all cooked mushrooms back to the skillet; cook uncovered for about 3-4 minutes until evenly coated and sauce reduces slightly. Serve hot!
