  • 3/4 cup brown sugar

  • 1 cup grated zucchini
  • 1/2 cup walnuts, chopped
  • 1 1/2 cups regular flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 1 8 oz package reduced-fat cream cheese
  • 1 cup icing sugar
  • 1 1/2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a 9×9-inch baking dish.
  2. In a large bowl, whisk together eggs, brown sugar, canola oil, honey, and vanilla until well combined. Stir in grated carrot, zucchini, and walnuts.
  3. In another bowl, mix flour, baking powder, ground ginger, and baking soda. Gradually add this mixture to the wet ingredients until just combined.
  4. Pour batter into the prepared dish and bake for approximately 25 minutes or until a toothpick inserted comes out clean.
  5. Allow to cool before preparing the frosting by beating cream cheese until smooth. Gradually add icing sugar and lemon zest until well blended.
