  • 1 cup unsalted butter, softened to room temperature

  • 2/3 cup packed light brown sugar
  • 2 large eggs, at room temperature
  • 1 and 1/2 teaspoons pure vanilla extract
  • 12 soft caramels, cut in half
  • 1/4 cup granulated sugar
  • 1 and 1/2 teaspoons ground cinnamon

Instructions

  1. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, cream of tartar, and salt.
  3. In a large bowl, cream together softened butter with granulated and brown sugars until fluffy.
  4. Beat in eggs one at a time along with vanilla extract.
  5. Gradually add dry ingredients until combined; chill dough for at least 1 hour.
  6. Scoop dough, insert half a caramel in the center, roll into balls, and coat in cinnamon-sugar mixture before placing on baking sheets.
  7. Bake for 11-13 minutes or until edges are lightly browned but centers remain soft.
