  • 4 cups vegetable broth
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 large carrot, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a slow cooker, combine olive oil with onion, garlic, carrot, and celery. Cook for about 5 minutes until vegetables are tender.
  2. Add kidney beans, cannellini beans, diced tomatoes (with juice), vegetable broth, basil, oregano, salt, and pepper. Mix well.
  3. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  4. During the last hour of cooking, add pasta to the soup. If needed, add more broth for desired consistency.
  5. Serve hot in bowls garnished with fresh parsley.
