Ingredients
- 2 pounds Welsh lamb (shoulder or neck, cubed)

- 2 tbsp vegetable oil
- 2 onions (diced)
- 2 leeks (finely diced)
- 2 tbsp plain flour
- 2 cups chicken stock
- 2 carrots (diced)
- 2 parsnips (diced)
- 3 large baking potatoes (thinly sliced)
Instructions
- Season lamb with salt and pepper. Heat oil in a skillet over high heat and brown the lamb in batches. Set aside.
- In the same skillet, melt butter and sauté onions and leeks until softened.
- Stir in flour and gradually add stock to create a thick gravy. Mix in additional seasonings.
- Transfer browned lamb to the slow cooker, add gravy, carrots, parsnips, and bay leaves; stir to combine.
