  • 2 pounds Welsh lamb (shoulder or neck, cubed)
  • Salt and pepper
  • 2 tbsp vegetable oil
  • 2 onions (diced)
  • 2 leeks (finely diced)
  • 2 tbsp plain flour
  • 2 cups chicken stock
  • 2 carrots (diced)
  • 2 parsnips (diced)
  • 3 large baking potatoes (thinly sliced)

Instructions

  1. Season lamb with salt and pepper. Heat oil in a skillet over high heat and brown the lamb in batches. Set aside.
  2. In the same skillet, melt butter and sauté onions and leeks until softened.
  3. Stir in flour and gradually add stock to create a thick gravy. Mix in additional seasonings.
  4. Transfer browned lamb to the slow cooker, add gravy, carrots, parsnips, and bay leaves; stir to combine.
  5. Layer sliced potatoes on top; season with salt, pepper, and thyme.
  6. Cover and cook on HIGH for 7–8 hours until everything is tender.
  7. For an extra crispy finish, brush potatoes with melted butter and place under a hot grill for 5–7 minutes before serving.
