  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

  • 6 cloves garlic, minced
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 2 large potatoes, cut into ½-inch cubes (1 pound)
  • 3 cups chicken broth
  • 1 bay leaf
  • 1/2 cup milk
  • 1 cup green peas, frozen
  • Black pepper, to season

Instructions

  1. Cut chicken thighs into 1-inch pieces and season with salt and pepper.
  2. Heat olive oil in a large skillet and sear the chicken until browned (4–5 minutes).
  3. Transfer chicken to the slow cooker; add flour, thyme, rosemary, garlic, onion, carrots, potatoes, broth, and bay leaf.
  4. Cook on low for 7–8 hours or high for 3–4 hours.
  5. Stir in frozen peas and milk; cook on high for an additional 10–15 minutes before serving.
