  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon chili powder (optional)
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup plain yogurt

Instructions

  1. Prepare the onion, garlic, and ginger by chopping and mincing them as needed.
  2. In a large skillet over medium heat, add vegetable oil and brown the lamb chunks for about 5-7 minutes.
  3. Add the chopped onion to the skillet and sauté until translucent; then incorporate the garlic and ginger for an additional minute.
  4. Mix in curry powder, cumin, paprika, cinnamon, and optional chili powder to coat the meat thoroughly.
  5. Transfer everything from the skillet to a slow cooker; add diced tomatoes and stir well.
  6. Cover and cook on low for 6-8 hours or high for 4 hours until the lamb is tender.
  7. Stir in plain yogurt just before serving for added creaminess.
