  • 2 lbs beef chuck or stew meat, cut into cubes
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14 oz) coconut milk

Instructions

  1. Season beef cubes with salt and pepper. Heat vegetable oil in a large skillet over medium heat and brown the beef on all sides.
  2. In the same skillet, sauté chopped onion until translucent. Add minced garlic and grated ginger; cook until fragrant.
  3. Stir in curry powder, garam masala, ground cumin, paprika, and cayenne pepper. Toast spices for about 30 seconds.
  4. Transfer browned beef and sautéed mixture to a slow cooker. Add coconut milk and mix well.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  6. Serve with warm garlic naan.
