  • 2 large eggs (beaten)
  • 1½ tablespoons minced garlic
  • 2 leaves napa cabbage (cut into strips)
  • ½ large carrot (matchstick pieces)
  • 1 stalk celery (matchstick pieces)
  • 3 ounces skinless boneless chicken breast (thin strips)
  • 3 ounces small shrimp (peeled and deveined)
  • 1½ tablespoons curry powder
  • 1 tablespoon vinegar
  • Oil for cooking

Instructions

  1. Soak the rice noodles in warm water for about 10 minutes until soft; drain.
  2. Scramble the beaten eggs in a wok with oil until cooked; set aside.
  3. Stir-fry minced garlic, napa cabbage, carrots, and celery for about 2–3 minutes.
  4. Add chicken strips and shrimp; stir-fry until fully cooked.
  5. Mix in soaked noodles along with curry powder, vinegar, and other flavoring ingredients; toss to coat evenly.
