Instructions

- In another bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt. Gradually fold this dry mixture into the wet ingredients until just combined.
- Prepare a cinnamon-sugar mixture by combining sugar with ground cinnamon.
- Pour half of the batter into a greased mini loaf pan, sprinkle some cinnamon-sugar on top, then add the remaining batter followed by more cinnamon-sugar.
- Bake for about 20 minutes or until a toothpick inserted comes out clean.
