  • 10 celery stalks
  • 1 green apple
  • 2 romaine lettuce leaves
  • 2 oz cheese (parmesan or feta)
  • 1/2 cup grapes
  • 1/4 cup walnuts or pecans
  • 2 Tbsp dried barberries or other dried fruits
  • 1 Tbsp olive oil
  • 2 Tbsp lime juice
  • 1 garlic clove
  • 1/4 tsp black pepper
  • 1/4 tsp salt

Instructions

  1. Rinse the celery stalks thoroughly under cold water.
  2. Chop the celery into bite-sized pieces and place them in a mixing bowl.
  3. Dice the green apple into small cubes and add to the bowl.
  4. Tear the romaine lettuce leaves into smaller pieces and add them as well.
  5. Halve the grapes if they are large or keep them whole if they are small.
  6. Toss in the walnuts or your choice of nuts for added crunch.
  7. Sprinkle in dried barberries or any alternative dried fruits you prefer.
  8. In a small bowl, whisk together olive oil, lime juice, minced garlic, black pepper, and salt until well combined.
  9. Pour the dressing over the salad mixture in the large bowl.
  10. Toss gently until all ingredients are well coated with the dressing.
