  • 12 lasagna noodles
  • 1 lb shrimp, peeled and deveined
  • 2 cups fresh spinach, chopped
  • 1/2 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 1 egg
  • 1 cup roasted red peppers
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté minced garlic and shrimp until pink. Remove from heat.
  4. In a bowl, combine chopped spinach, ricotta, mozzarella, Parmesan, egg, salt, and pepper. Add cooked shrimp and mix well.
  5. Spread filling onto each noodle, roll tightly, and place seam-side down in a greased baking dish.
  6. Blend roasted red peppers and heavy cream until smooth; pour over pasta rolls.
  7. Cover with foil and bake for 25 minutes. Remove foil, sprinkle additional mozzarella on top, and bake uncovered for another 10 minutes until bubbly.
