  • 1.5 cups cooked corn kernels

  • ¼ teaspoon salt (to taste)

  • 1 cup half-and-half
  • 4 oz feta cheese (crumbled)

Instructions

  1. Gather all ingredients. Peel and devein shrimp if needed; chop onion and mince garlic.
  2. Heat olive oil and butter in a skillet over medium heat; add onions and cook until softened (about 3 minutes). Stir in garlic and sauté for another minute.
  3. Add shrimp, chili powder, and salt; cook until shrimp turns pink (about 3–4 minutes).
  4. Stir in corn, smoked paprika, half-and-half, and half of the feta cheese.
  5. Simmer for about 5 minutes until the sauce thickens slightly.
  6. Squeeze lime juice over the dish before serving; top with remaining feta cheese and fresh cilantro.
