  • 1 green chili or jalapeño, sliced

  • 1/2 avocado, sliced

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add sweet potatoes and cook for 3-4 minutes until they start to soften.
  2. Then add broccoli, mushrooms, and green chili. Sauté another 4-5 minutes until tender and slightly charred. Season with salt and pepper to taste.
  3. In a mixing bowl, whisk together eggs with a splash of milk, salt, and pepper until fully combined.
  4. Heat butter or oil in a clean pan over low-medium heat. Pour in the egg mixture and gently stir until soft and creamy. While still warm, top with shredded cheese allowing it to melt slightly.
  5. Slice avocado in half. Remove the pit and scoop out the flesh using a spoon. Cut into even slices and season lightly with a pinch of salt.
