Ingredients
- 2 large eggs
- 1 tbsp milk or cream (optional, for fluffier eggs)
- Salt and pepper to taste
- 1 tsp butter or olive oil (for scrambling)
- 1/4 cup shredded cheese (mozzarella, cheddar, or parmesan)
- 1/2 cup broccoli florets
- 1/4 cup sliced mushrooms
- 1/4 cup diced sweet potato (small cubes)
- 1 green chili or jalapeño, sliced
- 1 tsp olive oil (for sautéing)
- 1/2 avocado, sliced
Instructions
- Heat olive oil in a skillet over medium-high heat. Add sweet potatoes and cook for 3-4 minutes until they start to soften.
- Then add broccoli, mushrooms, and green chili. Sauté another 4-5 minutes until tender and slightly charred. Season with salt and pepper to taste.
- In a mixing bowl, whisk together eggs with a splash of milk, salt, and pepper until fully combined.
- Heat butter or oil in a clean pan over low-medium heat. Pour in the egg mixture and gently stir until soft and creamy. While still warm, top with shredded cheese allowing it to melt slightly.
- Slice avocado in half. Remove the pit and scoop out the flesh using a spoon. Cut into even slices and season lightly with a pinch of salt.
- On a plate, arrange the scrambled eggs next to the sautéed veggies. Place avocado slices alongside for a beautiful presentation. Serve immediately while everything is warm!
