  • 1 cup cooked white rice (jasmine or basmati)
  • 1 lb ground beef (or ground turkey/chicken)
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp sesame oil
  • 1 cup broccoli florets
  • 1 cup zucchini, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, chopped
  • 1 cup sliced mushrooms
  • 2 tsp olive oil
  • 2 tsp minced garlic

Instructions

  1. Cook the rice according to package instructions; set aside.
  2. In a skillet over medium heat, add sesame oil and cook ground beef until browned. Stir in soy sauce, garlic powder, salt, and pepper until well combined.
  3. In another pan, heat olive oil over medium-high heat. Add minced garlic and all chopped vegetables; stir-fry for about 5–7 minutes until tender-crisp. Toss with additional soy sauce.
  4. To serve, layer rice in a bowl and top with ground beef and stir-fried veggies.
