- 1 sprig fresh rosemary
- 1 bay leaf
- 3 tablespoons extra virgin olive oil, divided

- 1 teaspoon freshly ground black pepper
Instructions
- Preheat a Dutch oven over medium heat and add 1 tablespoon of olive oil.
- Season the pot roast with salt and pepper, sear on all sides until browned (10-12 minutes), then set aside.
