Ingredients

  • 2 large eggs
  • 1 handful fresh spinach
  • Sliced avocado
  • 45 mushrooms (button or cremini), sliced
  • 1 small tomato, halved
  • 1 slice sourdough or whole-grain bread
  • 1 tsp olive oil
  • Salt & pepper to taste
  • Fresh parsley (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat and sauté sliced mushrooms for 5-7 minutes until golden. Season with salt and pepper.
  2. Add spinach to the skillet and wilt for about 1-2 minutes. Season lightly.
  3. Roast the halved tomato at 400°F (200°C) for 10 minutes or sear it in a hot pan until charred.
  4. Toast your bread until golden brown.
  5. In a non-stick pan, fry eggs sunny-side-up until whites are set and yolks remain runny.
  6. Assemble your plate: layer toasted bread with sautéed mushrooms, place fried eggs on top, add wilted spinach, roasted tomatoes, and fanned avocado slices.
