Ingredients
- 23 eggs
- 1 avocado, sliced
- 1 cup baby potatoes, halved
- 1 cup cherry tomatoes, halved
- 1 tbsp olive oil
- Salt & pepper to taste
- 1 tsp chili powder or paprika
- 1 tbsp chopped green onions (for garnish)
Instructions
- Preheat the oven to 200C (400F) and toss halved baby potatoes with olive oil, salt, pepper, and optional garlic powder. Spread on a baking tray and roast for 20-25 minutes until golden brown.
- Crack the eggs into a mixing bowl and whisk well. Heat a nonstick frying pan over medium-low heat, add oil, pour in the eggs, and stir gently until soft and fluffy. Season to taste.
- While cooking the eggs, slice the avocado and halve the cherry tomatoes.
- In a serving bowl, layer scrambled eggs at the bottom, followed by roasted potatoes on one side, avocado slices next to the potatoes, and cherry tomatoes. Sprinkle with chili powder and garnish with green onions.
