  • 1 lb sausage (your choice), sliced
  • 4 medium potatoes, peeled and chopped
  • 1 cup asparagus, trimmed and cut
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup chicken or vegetable broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown the sliced sausage for about 5-7 minutes; set aside.
  3. Cook the chopped potatoes in the same skillet for about 10 minutes until slightly softened.
  4. Add diced onion and minced garlic; sauté for an additional 3-5 minutes until translucent.
  5. Combine the cooked sausage, potatoes, onions, and asparagus in the baking dish.
  6. Pour broth over the mixture and season with thyme, salt, and pepper.
  7. Cover with foil and bake for 20 minutes; then add cheese on top and bake uncovered for another 15 minutes until bubbly.
