  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup (250 ml) heavy cream
  • 1/4 cup (60 ml) whole milk
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup (40g) grated parmesan cheese, divided
  • 2 cups (about 220g) shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut off the top of the garlic head, drizzle with olive oil, season with salt, wrap in foil, and roast for about 30 minutes until golden.
  3. Grease a 9×13-inch baking dish with butter.
  4. Thinly slice the potatoes using a mandoline slicer for uniform thickness.
  5. Layer the potato slices upright in the baking dish until all are used.
  6. In a saucepan, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; heat until mixed well without boiling.
  7. Squeeze roasted garlic into a bowl and mash it into a paste; mix it into the cream mixture.
  8. Pour the creamy mixture over the layered potatoes and cover tightly with foil.
  9. Bake covered for about 40 minutes.
  10. Remove foil and top with remaining cheeses; bake uncovered for an additional 30 minutes until bubbly and golden brown.
  11. Let cool slightly before garnishing with fresh chives and serving warm.
