  • 1 head garlic
  • 2 pounds red potatoes (washed and quartered)
  • 1 tsp olive oil
  • Kosher salt
  • 6 tablespoons butter
  • 3/4 cup half-and-half
  • Fresh ground pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Cut off the top of the garlic head and wrap it in foil with olive oil. Roast for about one hour until soft and golden.
  2. In a large pot, cover the quartered potatoes with cold water and add kosher salt. Bring to a boil, then simmer for approximately 15 minutes until fork-tender.
  3. Drain the potatoes and return them to the pot. Squeeze out the roasted garlic cloves into the potatoes.
  4. Gently warm the half-and-half and butter until melted. Pour this mixture over the potatoes along with additional salt and pepper.
  5. Mash to your desired consistency, leaving some lumps for texture if preferred. Serve hot, garnished with fresh herbs if desired.
