  • 2 medium poblano peppers
  • 20 oz. (about 4 cups) fresh corn (white + golden)
  • 1/2 cup finely diced red onion
  • 1/2 jalapeno (optional)
  • 1/2 cup chopped cilantro
  • 3 tablespoons lime juice
  • 1 tablespoon lemon juice
  • 1 teaspoon sea salt

Instructions

  1. Preheat the broiler to high heat (500°F).
  2. Place the poblano peppers on a foil-lined baking sheet and broil for about 10 minutes, turning halfway through until charred.
  3. Remove from the oven, cover with a plate to steam for 10 minutes.
  4. While steaming, cook the corn if necessary and prepare the remaining ingredients: dice onion, mince jalapeno, chop cilantro.
  5. Once cooled, peel and dice the poblano peppers. In a mixing bowl, combine all ingredients: corn, diced poblanos, onion, jalapeno (if using), cilantro, lime juice, lemon juice, and sea salt.
  6. Chill in the refrigerator for at least 30 minutes before serving.
